Day Four.

Last night’s Buddha bowl. Romaine lettuce, blueberries, brown rice, black beans, sliced white mushrooms, lots of green onions, and salsa for dressing. This Buddha bowl was even better than the one I had Monday night. Yummy!

In the short amount of time I have been vegan, my energy has increased and my anxiety has lessened. It could be a fluke or it could only be working because really want it too. Still, I am amazed!

I am crossing my fingers for further improvement (and maybe some weight loss as well)! Go me!!
